Taste the Tradition: Apple Cranberry Crisp Recipephoto

Cranberries during this time of year are a great reminder of the holiday spirit. This November, use this scrumptious cranberry recipe to bring family and friends together. You can taste this holiday treat at the Beach Café this winter.  Chef Matthew Steffen recommends pairing this dessert with a Bourbon Furnace hot cocktail. This mixture of Bourbon, apple cider, splash of Amaretto and a cinnamon stick will be sure to warm you up when the weather cools down. Apple Cranberry Crisp


Servings: 4

Recipe Ingredients:

1.       Orange Pecan Oatmeal Topping
2.       Cranberry Apple Filling
3.       4 scoops Vanilla Bean Ice Cream

Recipe Directions:  Put cranberry apple filling into 4 deep dishes. Top with the oatmeal crust. Bake at 350 degrees for 25 minutes. Rotate the crisps and cook for an additional 15 minutes or until bubbly and golden brown. Place a scoop of vanilla bean ice cream on each and enjoy.

Recipe for orange pecan oatmeal topping:

8oz – Butter (Cold) ½ inch pieces
1 ½ cup – A.P. Flour
1 cup – Brown Sugar
½ cup – granulated sugar
1 cup – oats
1 ¼ cup – chopped pecans
1 each – zest of an orange

Directions: Mix all ingredients in a food processor until the butter is broken up and incorporated. Chill for 20 minutes.

Recipe for cranberry - apple filling:

5 each – gala apple – peeled, cored, and sliced
½ lb. – fresh cranberries
½ cup – sugar
1 tbsp. – ground cinnamon
1 tsp. – salt

Directions: Mix all ingredients in a mixing bowl until everything is well coated. Reserve for later.

Woodmark Celebrates Woody's Retirementphoto

The Woodmark Hotel is excited to announce that Woody, our resident Labradoodle and Director of Guest Satisfaction will be retiring at the end of October. It will be a bittersweet goodbye, but we feel he has so much more to experience outside of the hotel. Woody has graced us with countless hours of faithful service and tail wags, so we couldn’t be happier to celebrate his recent years with us. He has devoted a solid fourteen doggie years of service and love. In honor of his retirement, we would like to share some great memories of Woody.


Memories of Woody

Woody loves his mini rawhide bones! Most pups would chew them up right away, but Woody likes to play hide and seek with them by going into a corner, digging a metaphorical hole in the carpet, and burying it from the world. He’ll then prance around and gloat his ability to successfully hide his precious doggy trophy from his conspiring friends. Being that he’s so adorable when he “misplaces” his titillating treats, it’s never long before we “find” it tucked behind a doorway or under a desk. We’ll even occasionally find one we didn’t know he had, as he disappears in the back seat of the car and reappears with a rawhide in his mouth, grinning from ear to floppy ear. In conclusion, while we have always enjoyed pulling Woody, on a reclamation mission, from between the couch cushions when he’s stuck, our ultimate goal will always be to finally convince him to eat one of his bones instead of hoarding them.

Woody would never pass up an opportunity to swim in Lake Washington! Every so often, we would love to take Woody on lakeside strolls to enjoy the fresh air. Once in a while we would let him jump into the water with pure joy and satisfaction. He would race around the back office and lobby with his skinny legs all sopping wet, bursting with excitement. One day an associate decided to take Woody for a quick walk down the waterfront. Not planning on taking a dip, the associate looked away for one minute, and the next was pulled into the cold waters of Lake Washington.  Oh, Woody.

Woody’s Future

As part of Woody’s retirement, he would like to announce his plans to tie the knot this coming January! After being part of countless bridal photo shoots and bride bonding, Woody wants to experience his own signature Woodmark Winter Wedding for himself and his fiancé, a beautiful Goldendoodle.  Meanwhile, Woody is being adopted by a loving family from Renton, Washington. Stay tuned for more details on Woody's upcoming nuptials.

The Present

Woody’s retirement will be celebrated at CityDog Magazine’s Halloween-themed Muttmixer on Tuesday, October 30th on the Woodmark Hotel’s Olympic Terrace.  Bring your four-legged friends from 6-8pm to enjoy tricks and treats for all canine attendees, a costume contest, and food and drink specials available for purchase. A unique amenity at the Woodmark is our fully stocked pantry. The pantry is located in the lobby and is open for raiding every night from 11pm-1am. Our lakeside location keeps us close to everything, but far from the everyday. As part of your home on the lake we suggest taking time to get out on the water and gain a new perspective. Before the winter approaches and the winds start to strengthen, jump on board the Woodmark II, our 28-foot classic Chris Craft Sedan Express, and learn some interesting facts about the lake. Our captain is very knowledgeable about the area and thrilled to answer any questions you may have. One of the great features of the tour is viewing the extravagant homes located among the shores. Lasting approximately two hours, the cruise showcases unique real estate and downtown Seattle views from the vantage point of Lake Union. 1) Taste a dish that features our own Bees honey

Taste the golden honey produced by very own Italian honeybees that reside right here on Carillon Point! After a long summer of production, the bees have delivered a fresh and pure ingredient for several exciting dishes at bin on the lake. After an intensive process of scraping the honeycomb, cleaning and filtering, our finished product has added great flavor across the menu. We suggest trying the Panna Cotta that features our own honey, peach compote, and hazelnut tuile. Our honey is also featured in our house-made butternut honey caramel ice cream and honey French 75 drink.

Washington’s Most Apple-tizing Dish at Beach Café this October: Apple Pie a La Modephoto

It’s that time of year when we all enjoy a scrumptious slice of house-made pie.  Chef Matthew Steffen of the Beach Café has provided a great recipe featuring apples, this month’s Destination Dish ingredient!  Fill your home with the aroma of crisp, warm apples and cinnamon sugar. What a tasty treat to offer your family and friends…or to just eat for yourself!

Washington Apple Pie a La Mode

Servings: 4

Recipe Ingredients:
1. Pie Crust
2. Pie Filling
3. 4 Scoops Vanilla Bean Ice Cream
4. 2 oz. - Chocolate Syrup
5. 2 oz. - Caramel

Recipe Directions: 
Take the 8 disks of dough and roll them out to make 8 circles. 4 circles should be slightly larger than the other 4. Use the larger 4 circles and place in greased mini pie tins. Fill each tin up with the pie filling and brush the edges with milk. This will help glue on the top crust. Place on the top crusts and press down to seal with a fork. Brush tops with milk and sprinkle with coarse sugar. Cut a small hole in the middle and chill for a ½ an hour. Bake at 425* for 15 minutes, then turn down the heat to 350* and bake until golden brown approximately another 30 minutes. Place 1 scoop of vanilla ice cream on each pie and drizzle with chocolate and caramel.

Recipe for Pie Crusts:
4 cup – flour
13 oz. – cold butter
2 Tbsps. – granulated sugar
4 Tsp. – kosher salt
1 cup – ice cold water

Whisk together all dry ingredients. Cut the butter into ½ inch cubes and fold into dry ingredients. With your hands mix thoroughly until they are pea size crumbles. Mix the cold water in tbsp. at a time with a fork until moistened. Flatten into 8 disks equal size, wrap, and chill for at least 20 minutes.

Recipe for apple filling:
8 each – apples (peeled and sliced)
2 Tblsp – butter
1 ½ cup – granulated sugar
2 Tsp – cinnamon
¼ Tsp – fresh grated nutmeg
2 Tsp – lemon juice
1 pinch – kosher salt
2 Tblsp – corn starch
3 oz. – cold water

Sauté apples in butter for 1 minute to coat the apples. Add the sugar and spices and continue cooking until the apples are tender. Stir in a 3oz corn starch slurry and cook until thickened. Place in refrigerator until completely chilled.
