Homemade Fig Jam
5lbs – Fresh Mission Figs, stemmed and split
5 ½ cups – Water
4lbs – Sugar
5 stars – Anise (Whole)
1 each – Cinnamon Stick
1oz. – Lemon Zest
In a heavy bottomed sauce pot, add the figs and water and cook over medium heat until the figs are soft and almost all of the water is evaporated. Put the cinnamon stick and anise in a sachet and set aside. Blend the figs thoroughly and place back on the heat. Add the sugar, zest, and spice sachet to the pot and cook for an additional 20 minutes. Remove the sachet and cool the jam.
