Braised Kale with Garlic & Chili

12 bunches - Lacinato kale
3 T - Garlic, chopped
1 t - Chili flakes
2 T - Lemon juice
1 T - Oregano, chopped
1/3 c - Extra virgin olive oil
Salt and pepper
Peel the leaves of the kale off of the stem. Reserve stem for vegetable broth. In a large nonreactive pot, bring a large quantity of water to a boil. Salt the water well. Boil the kale for 5 minutes and remove to an ice bath. Squeeze the kale dry and rough chop. In a large sauté pan, heat the oil and sauté garlic and chili until aromatic, 1 to 2 minutes. Sauté the kale until very soft, 10 minutes, adding water when the kale dries out. Add the lemon juice and oregano, and season well. Continue braising the kale until very soft, up to 20 minutes total. Season, drizzle with a little more olive oil and serve.
