Apple Cranberry Crisp
1. Orange Pecan Oatmeal Topping
2. Cranberry Apple Filling
3. 4 scoops Vanilla Bean Ice Cream
Recipe Directions: Put cranberry apple filling into 4 deep dishes. Top with the oatmeal crust. Bake at 350 degrees for 25 minutes. Rotate the crisps and cook for an additional 15 minutes or until bubbly and golden brown. Place a scoop of vanilla bean ice cream on each and enjoy.
Recipe for orange pecan oatmeal topping:
8oz – Butter (Cold) ½ inch pieces
1 ½ cup – A.P. Flour
1 cup – Brown Sugar
½ cup – granulated sugar
1 cup – oats
1 ¼ cup – chopped pecans
1 each – zest of an orange
Directions: Mix all ingredients in a food processor until the butter is broken up and incorporated. Chill for 20 minutes.
Recipe for cranberry - apple filling:
5 each – gala apple – peeled, cored, and sliced
½ lb. – fresh cranberries
½ cup – sugar
1 tbsp. – ground cinnamon
1 tsp. – salt
Directions: Mix all ingredients in a mixing bowl until everything is well coated. Reserve for later.
