The new menu, developed by Chef de Cuisine Dylan Giordan, provides guests with an innovative and inspired twist on bin on the lake's dining experience.
The new bin on the lake menu highlights locally-sourced ingredients that capture the bright, seasonal tastes of the Northwest with a Mediterranean influence. Comfortably designed to offer exceptional water views from every angle and a coveted outdoor patio, bin on the lake serves approachable cuisine in a relaxed, yet stylish setting.
A chef with a passion for pure ingredients, Chef Dylan Giordan has developed “A study of…” program designed to explore each element of food. Periodically, a new ingredient will be highlighted on the menu – from pork to cheese to lamb to salt – with specially created menu items that demonstrate the versatility of fresh ingredients and proteins. This distinctive exploration, along with bin on the lake’s use of freshly prepared honey from the Woodmark’s own “Bees on the Lake” program, inspired the restaurant’s new menu and further enhances the guests’ culinary experience.

Named Chef de Cuisine of bin on the lake in January 2012, Chef Dylan Giordan calls upon his Mediterranean background, his experience in some of the city's most esteemed restaurants and his passion for Northwest flavors and the region's stunning raw ingredients to create the redefined dining experience at bin on the lake. Giordan’s affinity for local artisans and farmers and the seasonality of ingredients began early in his career. Before joining bin on the lake, Giordan served as executive chef at Seattle’s Italian and Mediterranean sister restaurants Serafina Enoteca and Osteria and Cicchetti Kitchen and Bar. He began his decade-long tenure at Serafina as a sous chef in 2001, before being promoted to chef de cuisine, and eventually executive chef of both restaurants, once Cicchetti opened in 2009. His expertly crafted, yet understated food and culinary passion creates a whimsical and authentic bin on the lake menu.
The wine program at the restaurant pulls heavily from esteemed, local vintners to produce artfully crafted pairings and flights. With the largest Enomatic system on the West Coast, bin on the lake is known for its exceptional wine list, with a primary focus on regional wines. The restaurant hosts regular dinners with local winemakers and makes the tasting process accessible for guests with one, three, and six ounce pours. This unique offering allows a taste of wines that are normally only available by the bottle. Talented and experienced staff are on hand to guide guests through the dining experience and compliment the cuisine of Giordan. Like its menu items, bin on the lake features its own honey in its expertly prepared cocktails.
